Originally a writing room at the Fairmont Banff Springs, this intimate bistro is a hidden gem with an astounding view of the Spray and Bow Valleys, Mt. Rundle and the Fairholme Range. Empty tables (much like blank canvases) are full of potential to me. They are the prospect of enjoying good food, wine and conversation. It is a joy to come upon this bistro at opening time, hopefully with the sought after window table empty and welcoming you. Contemplating the mountain landscape in this elegant and warm historic interior is particularly fine, as is the prospect of a hike in the Rockies on a summer day. The Elizabethan panelling, grape cornice and rows of wine bottles (that also appear to be enjoying the view) lead the eye to the window, while the view itself draws you into the landscape beyond.
